Korean Tofu Labels: Firm Tofu, Soft Tofu and Sundubu Explained

Choose firm tofu when your recipe needs slices or cubes that can be handled in a pan. Choose soft tofu for a recipe that wants a more delicate block. When making sundubu-jjigae, look for 순두부 (sundubu) or a product identified as “soon tofu” and follow the recipe's ingredient notes.

The easiest mistake is to buy by the picture of the finished dish. Read both the texture name and the contents: a packet of plain tofu, a stew seasoning and a complete tofu stew kit are different purchases.

First read the Korean use words

두부 (dubu) is tofu. Two useful words on block-tofu packaging are 부침용, meaning intended for pan-frying, and 찌개용, meaning intended for stew. These describe a suggested use, rather than a promise that the tofu can only be cooked one way.

For a concrete Korean-label example, Pulmuone's three-pack of single-meal tofu contains separate pan-frying and stew portions. Its description distinguishes the firmer 부침용 from the softer 찌개용. Those are examples of a manufacturer's use labels, rather than universal specifications for all tofu.

Do not expect identical texture from every brand using the same English adjective. Check the maker's suggested uses and the recipe's description of the finished dish.

Firm tofu: start here when shape matters

Firm block tofu is the straightforward starting point for a recipe that asks you to cut, lift and turn individual pieces. Pulmuone describes its firm product as denser than its soft or silken tofu and suitable for slicing, cubing or crumbling. Manufacturer's firm-tofu guidance

Read the preparation steps before assuming that every tofu dish needs pressing. For that firm product, the manufacturer makes pressing optional. Whether your dish needs it depends on the recipe and the tofu you bought; it is not a universal preliminary step.

A useful question at the shelf is: “Does this recipe need the tofu to remain in neat pieces?” If yes, match its requested firmness before comparing package size or price.

Soft and silken: read the full description

Soft block tofu and silken tofu are not simply two names that all manufacturers use interchangeably. Pulmuone sells separate Natural Soft and Natural Silken products. It describes the silken version as smooth and custard-like, and the soft version as slightly less smooth.

Its silken-tofu instructions specify draining and gently patting dry, without pressing. That is a practical reason not to apply firm-tofu handling instructions to every package.

For a recipe that names silken tofu, look for that complete wording. If a shop only stocks “soft,” check the product description or the recipe author's substitution advice before assuming it will behave the same way.

Sundubu, soon tofu and the stew-kit distinction

순두부 is commonly written “sundubu,” “soondubu” or “soon tofu” in English-language shopping contexts. Pulmuone uses “Soon Tofu” for the soft tofu included in its Soon Tofu Stew Kit, alongside separate sauce, broth and flavored oil components.

That creates an important label check: “Plain” can describe a version of a stew kit rather than an unseasoned block of tofu. On this particular kit's ingredient page, the sauce includes beef bone and seafood ingredients, and the flavored oil includes seafood. Do not infer the complete kit's suitability from the tofu component alone.

If you are following a recipe from scratch, confirm whether you need tofu alone. If you are buying a kit, read its own cooking directions and contents rather than adding the whole kit to a recipe already designed around separate seasonings.

A final package check

Before paying, compare the net amount with your recipe, read the storage directions and check the ingredients and allergen statements. Soy is listed on Pulmuone's plain tofu products, while a kit can introduce additional ingredients through its sauce or oil.

Save the full label name after a successful cook. “The blue tofu packet” is difficult to replace when packaging changes; “firm tofu for pan-frying” plus the actual product name is a much clearer shopping note.
